A Tasty Treat


I have been making these frozen granola bars for my boys for a while.  They love them.  The texture out of the freezer is awesome and the fact that they are COLD has been nice on these hot days.  I know that I am always looking for new and healthy snack ideas, so I had to share!  Enjoy!

Frozen Granola Bars
  • 1 ripe banana, mashed
  • 1/4 cup coconut oil
  • 1/2 cup maple syrup
  • 1/2 cup peanut butter ( or other nut butter)
  • 1 1/2 cups oats
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup raisins (or other dried fruit)
  • 1/2 cup mini chocolate chips
Mix the banana, oil, maple syrup, and peanut butter in a large bowl.  Add all of the dry ingredients and mix until combined.  Line an 8x8 pan with parchment paper and spread the mixture out evenly.  Pop it in the freezer until frozen.  Remove the bars from the pan by lifting the edges of the parchment paper.  Cut them into bars and wrap with foil.  Place them in your freezer until you are ready to enjoy them!
